Clean Turkey Joes

 
 
A clean version of another childhood favorite, sloppy joes! These are cheesy AND 'skinny' at the same time!! (Recipe courtesy of Celine Angulo)
1lb lean ground turkey
1 medium onion
2 tsp minced garlic
2 tbsp low-sugar ketchup (or tomato paste)
1 tbsp mustard
Salt & pepper to taste

1 red or yellow bell pepper
1 14.5oz can diced tomatoes, drained
1 tbsp mustard
1/4 cup low-sugar ketchup (or tomato paste)
1 tbsp honey

1 tbsp parmesan cheese
1/2 cup reduced fat cheddar cheese

Directions:

Spray skillet with non-stick cooking spray if needed, throw in lean ground turkey, diced onion, garlic, 2 tbsp low sugar ketchup, and 1 tbsp mustard. Cook until meat is done.

Put diced bell pepper, diced tomatoes, 1 tbs mustard, ¼ cup low sugar ketchup, and 1 tbs honey in crockpot. Add the cooked ground turkey into crockpot.

Cover and cook on high for 2-4 hours or on low for 6-8 hours.

Stir in parmesan cheese and reduced fat cheddar cheese just before serving.

Serve with whole wheat bun or sandwich thins if you want! Calorie count does not include bun.

** You can also use NO sugar ketchup, I just haven't been able to find any.
