Power Protein Buckeyes

healthy Christmas cookieBuckeyes are definitely a holiday tradition in our house, but they are loaded with fat and sugar. So, a few simple swaps and you get a protein rich treat that's still going to satisfy your holiday cravings!

1 cup natural peanut butter (I prefer Smuckers)
1 cup rolled oats (not instant)
1-2 scoops of protein powder (I use Vanilla Whey Protein Powder)
2 TBL Sunflower Seeds
1/3 cup of ground flax seed meal
1/4 Cup Honey
Dark Chocolate Chips
  • Mix first ingredients and roll into 24 balls.
  • Refrigerate at least one hour.
  • Melt dark chocolate chips and dip or drizzle the peanut butter ball mixture.
  • Store in the freezer until ready to serve
