21 Day Fix Enchiladas

This clean eating version of Chicken Enchiladas is 21 Day Fix friendly and definitely one of those I-can’t-believe-it’s-healthy types of recipes. Besides the cheese, it’s also nearly fat-free.  The green chiles and cumin add flavor to the filling.
Modifications:  For the 21 Day Fix challengers, go lighter on the cheese if you’re in a lower calorie bracket.  Or, add more cheese to half of the pan if you’ve got picky family members and clean eating kids like I do.

21 Day Fix Container Count (1 enchilada) = One red, one yellow, one blue


21 Day Fix Chicken Enchiladas
 
Ingredients
  • 4 cups torn fresh spinach (about ½ bag)
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp. minced garlic
  • 2 C. shredded chicken
  • ¼ cup thinly sliced scallions
  • 1 4-ounce can diced green chile peppers (undrained)
  • 1½ C. Greek yogurt
  • 2 tablespoons brown rice flour
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • 1 tsp. lime juice
  • ½ cup skim milk
  • 6 7-inch whole wheat flour tortillas
  • Tomatoes, diced
  • 1 cup shredded reduced fat cheddar or Monterey Jack cheese
  • Chopped tomatoes for garnish
Instructions
  1. Preheat oven to 350 degrees.
  2. In a skillet, heat olive oil with garlic over medium heat. Wilt torn spinach leaves (about 3-4 minutes).
  3. Remove from heat, stir in chicken, scallions and chiles.
  4. Meanwhile, prepare sauce of yogurt, flour, cumin, lime juice, salt and milk.
  5. Pour half of the sauce into the filling mix.
  6. Fill six whole wheat tortillas with filling mix and roll, placing seam side down in a baking pan.
  7. Top with remaining sauce and sprinkle with cheese.
  8. Bake for 15-20 minutes until cheese is melted and browned.
  9. Top with tomatoes.

Asian Salad

While the Japanese are pretty healthy as a culture, some of my favorite foods aren’t.  This salad is a great way for me to get my Asian fix with out sacrificing taste!




21 Day Fix Asian Salad (Serves 1)
Container Checklist: 2 green, 1/2 purple, 1 orange
Ingredients:
  • 1 1/4 cup organic butter lettuce
  • 1 cup celery, chopped
  • 3/4 cup pears, peeled and chopped
  • 1/4 cup Green Onions
  • 1 Tbsp mixed seeds (pumpkin and sunflower)
  • 1 Tbsp homemade Asian Vinaigrette (recipe posted below).
Toss first five ingredients then drizzle with vinaigrette. It’s kind of any ugly salad, it’s mostly green, but it sure is tasty!
Asian Vinaigrette (Serves 6)
  • 1/4 cup 100% orange juice
  • 1/4 cup rice vinegar
  • 2 TBSP reduced sodium soy sauce
  • 2 tsp raw honey
  • 1/2 inch fresh ginger,peeled & finely grated
  • 1/4 cup sesame oil
Combine orange juice, vinegar, soy sauce, honey and ginger in a medium bowl. Whisk to blend.  Slowly add oil while whisking, mix well.  Store in refrigerator, covered.  If it thickens when cold, hold it at room temp for 30 minutes and shake well before using.

Moms on a Mission -- the struggle is real!

As a mom and a very busy mom at that I know that the STRUGGLE is REAL!!! I know that you are being pulled in a million different directions and the last thing that you want to worry about is what you are eating and when you are fitting in your workout. I also know at the exact same time you are wishing you could fit in those jeans, were that dress for that event or just feel comfortable without your muffin top spilling out of your jeans. I remember not wanting to wear anything but yoga pants because it didn't squeeze my FAT! I get it!!! Like I said, the STRUGGLE is REAL! 1.  You are required to have ME as your COACH through Team Beachbody.

2.  Then together WE pick a fitness program through Team Beachbody that fits your needs. It does not matter what your ability level is, I have something for you!
{21 day fix, T25, Chalean Extreme, P90X3, Turbofire, Insanity, Piyo, ect...}

3.  You are REQUIRED to replace 1 meal a day with Shakeology ONLY for the duration of the group. Once it is over you can decide if you have enough healthy recipes in your pocket to prepare meals without needing shakeology or if you find its convenient and it takes care of 1 meal you can keep going!  I still 14 months later drink Shakeology daily.

4.  Then, it is required that you participate in the online closed group daily.  Each day I will share a tip, recipe, motivation or meal plan.  You check in, rate your day and get your inspiration for the next 24 hours.  You can log in whenever you want just as long as  I know you are there it's all good!

Introducing p90!

I am beyond pumped about the newly released Beachbody Home Fitness Program, P90 by none other than the amazing Tony Horton!!!!!  Seriously when I first heard about this workout I was pumped!  Have you ever done P90X???  It is hard!!!  Have you ever tried P90X and failed?!?!  YOU ARE NOT ALONE!  Do you want to do P90X but you don't feel like you are at that fitness level just yet?  Do you want a stepping stone to build a base level of fitness so that you can tackle something like P90X?

Well, Tony saw the need for a program that was the foundational skills to advancing to a more extreme workout and he created P90!  He created it for people just like you and me!  We want to be in the best shape of our lives, but we need to start at the beginning and build core strength, stability and have correct form so that we don't get injured and end up back at the start again!  It's about creating a safe and effective starting point for people to introduce fitness into their lives.  It's also a great way for people to conquer their fears of strength training and working out.

Who would this program be perfect for?

  • You don't want a hardcore workout but you want to lose weight.
  • You want to get back some of the muscle tone you have lost over the years.
  • You want to just get out of bed in the morning without a backache.

Who should do P90?

So this is my personal opinion.  I know for a fact that my Dad has already committed to doing the entire workout.  My Dad has done the 21 Day fix and really enjoyed it but he is not at the level where he wants to be doing push ups, pull ups and crazy plyometric jumps and lunges.  He wants to improve his health and not potentially cause injury. 
This workout will be perfect for him.  He works out every day before going to work, drinks his shake for breakfast and is as healthy as can be!

My husband is also going to do P90.  Right now he has a torn labrum so he cannot do overhead presses, push ups, planks and has to be very careful with the weight bearing workouts. He has been struggling with T25 because of the plank moves and push ups.  He also tends to have bad knees so he needs something that is going to be easier on his joints.  P90 is perfect for him! 

I believe that if you want to change your body, you want to start creating a healthy exercise routine then this is going to be the best way to do it.  Tony Horton is an amazing trainer with an entire team behind his workout philosophy that is tried, tested and true.  I know he presents amazing fitness programs because I have done P90X, P90X2 and P90X3 and there is nothing short of amazing results from them all!

I know for a fact that this is truly going to be a spectacular workout.  I mean, heck you have SERIOUSLY no excuse not to workout.  There is something out there for everyone!  Sometimes we just need a little motivation in order to make it happen!
