Lemon Poppy Seed Dressing

Mmmmm, you've got to try this:


1 tsp lemon zest
4 TB lemon juice
4 TB white wine vinegar
4 TB stevia ( I think I may have only used 3)
2 TB olive oil
2 tsp poppy seeds

21 Day FIx Chicken Chili

Want an easy, family friendly meal great all year long? I literally make this every week!! Thrown everything in the crockpot and let it simmer, the longer the better. Mmmmm, your house will even smell amazing :) Let me know how you like it!


 

 

Ingredients:


3 chicken breasts - cooked and chopped into cubes
2 cans diced or stewed tomatoes with green chilies
8oz whole kernel corn, canned
1/2 onion diced
2 garlic cloves (I used minced....and A LOT OF IT)
16oz can of Black Beans
16oz  can of Kidney Beans
1 Tbsp Tomato Paste
Home made seasoning mix - Cumin, Chili Powder and Mrs Dash Chipotle seasoning.  Add to desired taste...I put a LOT :) its all salt free and a "free food" on the program.
4 oz low fat shredded cheddar cheese (optional)

***Simply delish with a dollop of plain greek yogurt on top in place of sour cream too!!

DIRECTIONS:

 Place all ingredients except the cheese into the crock pot. Cook on low for 4 hours or high for 2 hours. Top with 1 oz cheese per serving if desired.

21 Day Fix containers: Fill one GREEN container with chili and serve in your bowl. You will need to mark off one RED and one YELLOW container from your daily container allotment. (pg. 71 in guide book)

Post-Easter ReFRESH


How many times have you tried "dieting" and failed??

I bet it usually goes something like this:
  You start a new "diet" and the first week is the honeymoon period. You're excited about it and so you stay committed. Week 2 rolls around, and the novelty has worn off. It becomes a chore and you begin to slack off. We are asking our bodies to do more with less.  We have hit a nutrient deficit and this comes across as cravings.  We may become irritable and grouchy.  The cravings escalate and as we give in to a few of them, we may go overboard and then wind up feeling guilty. A cheat here and there, a missed workout, all of a sudden it gets easier and easier to tell yourself "its ok, I'll get back on track tomorrow!" That is usually followed by, "I'll get back on track on Monday" which comes, and you still don't restart. But then you begin to feel guilty for giving up and catch a glimpse in the mirror and realize you're really unhappy, so the cycle starts all over again...

So what ends up happening is since you lack the nutrients your body needs you start having those cravings. You crave sugar and sweets & you fall off the wagon. And you fall HARD! I recently heard a description of the "Diet Cycle" and it really resonated with the way that I used to do things!

18 months ago I took a leap of faith, but little did I know at the time that the little leap was actually a really big one. I watched my personal Beachbody coach become successful and I kept thinking to myself, "why not me?" "Why should I not consider something like this?" "I am determined, driven, and I could surely do this, right?" I had already signed up to be a preferred customer/discount coach when I first enrolled a month earlier to get started on my own health/fitness journey and receive 25% off my Shakeology monthly. After my 4th child I was bigger than ever, but it was working. I joined a challenge group and got really great results. Little did I know I was starting down a path towards a entirely new lifestyle. I am currently ranked 1062 out of 230,000 + coaches in the entire organization. While this is not "stellar" I am telling you this to see that I am serious about my business and the opportunity I have to offer and I am willing to teach you how to duplicate my success.

Happy 6th Anniversary to Shakeology


On March 15, 2009 Shakeology was born. 6 years later one little scoop packs a powerful punch, full of vitamins, minerals, phytonutrients, antioxidants, adaptogens, and superfoods. It started with Chocolate and Greenberry and now there are 6 different flavors to choose from, two of which are vegan.

Shakeology has made my family more healthy, it has changed our lives really. Amazing, Hubby Approved Cauliflower Crust Pizza

This IS the BEST cauliflower pizza crust you will ever make. I've tried many versions and I'm confident that this pizza, this very one here, with a crust made out of a vegetable, is so delicious that you won't even think twice about the whole crust being made out of a vegetable thing. And yes, you can slice it and pick it up like a real piece of pizza.

If, despite my description, you are still a skeptic about the whole cauliflower crust thing, well then all I can say is, this is husband  (and kids) taste tested and approved.

 Oh, yeah the recipe
 

Place a pizza stone in the oven, or baking sheet if you don't have a pizza stone. Preheat oven to 450 degrees. On a cutting board, place a large piece of parchment paper and spray it with nonstick cooking oil (I used coconut oil) 
 
Wash and throughly dry a small head of cauliflower. Cut off the florets, you don't need much stem. Just stick with the florets. Pulse in your food processor for about 30 seconds, until you get powdery snow like cauliflower. See above photo. You should end up with 2 to 3 cups cauliflower "snow". Place the cauliflower in a microwave safe bowl and cover. Microwave for 4 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before attempting the next step.
 
 
Once cauliflower is cool enough to handle, wrap it up in the dish towel and wring the heck out of it. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly mess. I got a 1/3 cup water out of this cauliflower.
 
 
Dump cauliflower into a bowl. See how nice and light it is now, almost like flour! Well, kinda. Now add 1/4 cup parmesan cheese, 1/4 cup mozzarella cheese, 1/4 teaspoon kosher salt, 1/2 teaspoon dried basil (crush up the leaves even more between your fingers before adding), 1/2 teaspoon dried oregano (crush up the leaves even more between your fingers before adding), 1/2 teaspoon garlic powder (not garlic salt), and a dash of red pepper if you want. Now add your egg and mix away. Hands tend to work best. 
 
 
 
Once mixed together, use your hands to form the dough into a crust on your oiled parchment paper. Pat it down throughly, you want it nice and tightly formed together.
 
Now, using a cutting board slide the parchment paper onto your hot pizza stone or baking sheet in the oven. Bake for 8 - 11 minutes. Until it looks like this:

Delicious, right? Just wait till you add the toppings and finish it off! Now add however much sauce  cheese, and toppings you want. You know how you like your pizza - so go for it! Slide parchment with topped pizza back in the hot oven and cook for another 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden. Heaven!!
 

allow it to cool for a minute or two. Probably closer to two. Then using a pizza cutter and a spatula serve up your delicious grain-free cauliflower crust pizza!
 
INGREDIENTS:
 
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 teaspoon kosher salt
1/2 teaspoon dried basil (crush it even more between your fingers)
1/2 teaspoon dried oregano (crust it even more between you fingers)
1/2 teaspoon garlic powder
optional a few shakes of crushed red pepper
1/4 cup shredded parmesan cheese
1/4 cup mozzarella cheese
1 egg

Desired amount of sauce, cheese for topping, and other toppings.

*3/15 update - If you are using a larger sized cauliflower, up the eggs to 1 egg  plus 1 egg white. You want your "dough" to be sticky. When I make a bigger sized pizza (using more cauliflower) I up the seasonings and the egg, but often leave the amount of cheese the same. Make sure you pat the dough tightly together when forming your crust. It really helps to place the crust (on an oiled sheet of parchment paper) on a HOT pizza stone or baking sheet. Make sure the crust is golden in color before topping it and baking it again. I truly believe cooking it the proper length before topping it helps keep the crust together. 
 ** The slices will still be kinda floppy, but they shouldn't be crumbly.

ALSO...
  • Instead of microwaving you can steam the cauliflower just enough to get it slightly tender.
  • Instead of a food processor you can use a cheese grater to grate the cauliflower. 
  • I highly recommend parchment paper over tin foil. Don't use wax paper.
